Labne with Sizzled Scallions and Chile In case you’re hosting this week, do yourself a favor and invite The Dip.
Blanched Green Beans with Scallion and Soy This is the best season for green beans, and I’ll be making them every opportunity I get. These ones are great for a summer barbecue or dinner party, as they only get better the longer they sit in their tangy, soy sauce-y bath,
Grilled Corn and Scallion Salad The corn is very, very good right now, and you should make this corn salad to celebrate.
Lentils (Daal) with Fried Lemon and Garlic While red, yellow or brown lentils/daal would work here (black and green will never fully achieve that porridge-like texture, so I would not use them here), I prefer yellow or red because I am superficial and I think those are the most gorgeous quick-cooking lentils.
Potato Salad with Celery and Mustard This mustardy, crunchy, tangy, herby, wonderful potato salad makes an excellent plus one at any picnic/bbq/party all summer long. Don’t worry about it being out for too long—it gets better the longer it sits, but it will also surely get eaten quickly.
Pasta Salad with Zucchini, Sizzled Scallion, and Parmesan The capers and lemon give it the bright brilliant tanginess that pasta salad craves, but what truly makes this one special is the mix of textures.
Blue Cheese Dip If you’re looking for more game day snacks, this is an ideal dip for all your cold, crisp vegetables.
Butcher’s Steak With Leafy Greens Salsa Verde . These cuts are great with little more than salt and pepper, so you can truly assess their flavor. But a tangy, garlicky salsa verde made from dark leafy greens doesn’t hurt. Serve with a squeeze of lemon and a bowl of salty potato chips for a truly faux-bistro experience.
Quick-Seared Short Ribs With Charred Scallion Salsa To serve, thinly slice the meat and top it generously with a mixture of fresh and charred scallions and tomatillos. Set it out with warmed tortillas and hot sauce for a D.I.Y. taco experience, though it’s also great over a bed of peppery greens or crunchy romaine.
