What to Cook

Buttered Zucchini Omelette

Tip this little creation onto a plate and dab a little butter on top if you have extra.

Crispy Chickpeas and Lamb with Greens and Garlicky Yogurt

Often, I just toss them with greens and top them with a fried egg, but when I want ground meat, I’ll turn the chickpeas into a legitimate dinner with crispy spiced lamb and garlicky yogurt.

Persimmons and Pears with Blue Cheese and Spicy Pecans

Not particularly sweet, there’s no acid to speak of, and the texture is best described as soft. But . . . I love them.

Raw and Roasted Kale with Pistachios and Creamy Pecorino

Pasta with kale, kale salad with cucumbers. I literally cannot get enough.

Vinegared Romaine with Sour Cream, Bacon, and Herbs

Because it’s a nod to the classic wedge salad, you could, of course, use iceberg (which I happen to love), but the romaine has a much better, greener flavor.

Chicories with Anchovy Bread Crumbs and Egg Yolk

Without any whisking, freshly cracked and freed from the shell, separated from the watery white, rich, fatty egg yolks all by themselves are one hell of a secret ingredient.

Caramelized Winter Squash with Toasted Coconut Gremolata

This recipe is my more practical “I can’t have ice cream for every meal” compromise, using honey instead of brown sugar and coconut oil instead of butter.

Grilled Tomatillo Salsa

Grill the vegetables, turning occasionally, until they turn a nice army green and get as charred as the grill will allow

Charred Broccoli Salad with Garlic and Basil

When you’re ready to serve, add the basil and toss again. If you like, add cheese (though it doesn’t need it, it does give it a sort of nice antipasto vibe to the whole thing).

Great Chicken Parmesan

This chicken parmesan is on a sheet pan, but I’m not calling it Sheet Pan Chicken Parmesan because I don’t believe that there’s any other way one should make Chicken Parmesan– feels redundant.

Fish Cakes with Beans and Greens

I wish I took as good care of myself as I do my baby, where I’m obsessed with making sure he’s getting enough micronutrients like protein, fiber and omega-3’s. I’m not a nutritionist, but I know enough to know this recipe has all of the aforementioned things.

Chicken Noodle Soup with Cabbage, Dill and Lots of Lemon

Among all the ways that soup can be exciting, sometimes all you want is for soup to be whatever the opposite of that is. Comforting. Calming. Soothing. Basic. Expected.
